I first discovered dosa during my trip to India. These large thin savoury pancakes popular in South India is made from fermented rice and black lentil dal, served with a variety of chutneys and sambar or spicy vegetable stews. They also come in different fillings with masala dosa (spicy curry potato) being my favourite.
